My friend’s make fun of me and my obsession with beet juice. And I wouldn’t blame them; if it were up to me I’d have beet juice 24/7. In this post I’ll break it down as to why I’m enamored with this vegetable. We’ll call this section the wonderous properties of beets.

Beets have been used sinceĀ ancientĀ times to treat many ailments, more specifically blood illnesses and digestive problems, but also anemia, circulatory problems, kidney and liver flushes (lord knows, I need those flushes more than not).

When juicing, a few tips to finding the best beets, is choosing one that is both firm and smooth to the touch. Try to stay away from those that are shriveled in appearance, and look for smaller beets when juicing, since it is recommended to drink no more than 1 or 2 ounces in your juice. In high quantities, it may temporarily paralyze your vocal chords, give you hives, increase your heart rate, and cause fever. I always like a blend of beet and green apple juice for it’s flavor and the properties that green apples add to beets. Plus apples are a neutral fruit which won’t add to the high content of oaxlic acid that beets have.

and that.. is why i swear on beet and apple juice at any given time of the year.
